Do you love baking like I do?  Last night I made an Apple Pie after making homemade soup all day in the crock pot!  I haven't tasted either yet because of a medical test I was awaiting but I am looking forward to having some of that pie and soup tonight!  Here is a recipe for "Friends Sharing Tea" that is easy for your Afternoon Tea Party.....some lovely Coconut Cream Tarts..........

You will be making the shells first: You will need 3 cups of shredded coconut, 1 cup of sifted flour, 4 eggs and 2 tsp vanilla.

Combine all the ingredients in a bowl and mix well, spray a mini muffin pan with vegetable spray and press dough into the cups. Keep them thin as I got mine a little thicker than I should have in the bottom of the tart.  Bake at 375 degrees for 15-20 minutes.
Watch for browning!

Now for the coconut filling: 1 cup of heavy whipping cream should be whipped with 1/4 cup of confectioners sugar. In a separate bowl mix 1 large package of coconut cream instant pudding with milk as called for on the package - then mix with cream. Easy! Refrigerate till firm.

Spoon into those shells. Should make around 48 tarts!

Do to the fact that I had a lovely colonoscopy this morning - this is a repost from 2009! ( I think you will understand) BYA:  I had a good report!

If you have something to share about tea such as a recipe, table setting, any ideas for a tea party or anything tea related, please link up!

Glad all was well with your test. I had the same plus several others last year and all clear.

Something I do not like - coconut.
