If you are planning an Irish Tea Party, this would make a nice addition to your menu! I have been attending the Denver Gift Market this week so I am reposting this recipe.....


I love baking and cooking my way through the seasons and celebrating with different special seasonal foods.  Here is a simple crockpot winner:

Here is what you will need: about 6 red potatoes, cut up and yes I left quite a bit of the skin on, 2 carrots peeled and cut up, 1 bunch of green stemmed onions - cut up-chives stems according to desire, 1/2 cup chopped celery, 2 regular cans of chicken broth, salt and pepper, 1 cup of heavy cream, 2 cups of shredded cheddar cheese.  I also added 1 1/2 cups chopped Smithfield Ham I had left in the freezer.

Here is what you do:  place potatoes, carrots, onion, broth and salt in slow cooker on high for 3 1/2 hours until the veggies are tender.  Hopefully your husband won't accidentally unplug it like mine did!
Stir in the heavy cream, pepper and ham after the veggies are tender and turn heat down to warm - now stir in the cheese until melted.  A wonderful soup!

Irish cheddar Potatoe Soup. I made this for St. Patrick's Day and it was a hit. My family loved it...this will be a keeper in the recipe file.
