I don't have to tell you that this summer has been very hot - so jello salads are back and satisfy the sweet tooth enough to skip the baking!   This is really like a dessert!  Here is a recipe I would like to share:

I love church cookbooks and I knew I could turn to the old 1972 First Church of the Open Bible Cookbook (Des Moines, Iowa) for some great jello salads.  Right away, I noticed a "well used page" with a recipe for Strawberry Salad by Lu Isbill.  Iowa is known for certain types of food - large dishes to feed a crowd. So here is Lu Isbill's recipe with a few changes.  (Lu lives in heaven now)

Strawberry Salad:

1 6 oz pkg of strawberry jello, 3 bananas mashed, 2 cups boiling water,  1 20 oz can crushed pineapple drained, 16 oz frozen strawberries (I bought fresh which were way cheaper and chopped them up), 8 oz sour cream + 8 oz whipping cream and 1/2 cup confectioners sugar

Dissolve the jello in the boiling water and add the chopped strawberries and pineapple.  Pour 1/2 of this into a 9 x 13 pyrex casserole dish.  I put it in the freezer until it was cool and then added the mashed bananas.  Back in the freezer to cool more. Mix the whipping cream with the confectioners sugar and beat until stiff and then beat in the sour cream. When the salad in the freezer is firm enough - spread this mixture on top and then pour the last 1/2 of the jello with strawberries and  pineapple on top!
Refrigerate until firm. (not freezer)  This will serve 12 -15 people and taste wonderful on a hot day!
