I just couldn't stand not knowing what went wrong with the muffins I baked yesterday last night after dinner I rebaked more pumpkin muffins again at 400 degrees and sure enough.........PERFECT!  I went through several of my muffin folders and noticed that most all called for 400 degrees.

So what have I learned about muffins - "they need to be baked at 400 degrees" is right!  (The recipe I used called for 350 degrees which didn't work)

These are delicious spicy with pumpkin and a little orange and here is the recipe which made 10 muffins for me.  If you want to take these up a notch, you could add 1/2 cup walnuts and 1/2 cup craisins and you would have perfection and more muffins!

You need: 1 cup sugar, 1/2 cup pumpkin puree, 2 Tb vegetable oil, 1 large egg, 1 Tb orange juice, 1 tsp orange zest, 1 1/2 cups flour, 1 Tsp baking soda, 1/2 Tsp ground cinnamon, 1/2 Tsp ground cloves, 1/2 Tsp ground ginger, 1/2 Tsp salt

Preheat oven to 400 degrees (not 350)  Spray 12 cup muffin pan with nonstick spray

In a med bowl, combine sugar, pumpkin, oil, egg, orange juice and orange zest and mix well.  In a separate bowl combine other ingredients and then mix the two together.  Bake muffins 18 minutes.  This recipe came from Teatime Bliss Magazine
