MISSOURI PEACHES ARE WONDERFUL

 Now that summer is here and the heat is
definitely here, there are an abundance of
 peaches available.  We drove over to the Amish
country in Clark and bought a whole case
 of peaches.  Actually, the peaches originally
 came from down in southeast Missouri.



I am so glad I saved my
home canning items and
quite a few jars.  



I decided to make some peach jam and pies and
still have plenty left over to just eat.









I also made a pie for ourselves
and one for our son's family.


I did add 2 Tb fruit pectin
to the pie and 1 Tb cornstarch.

I also increased the
 cinnamon to
2 Tb.

JULY ROSES TABLESETTING

 I went out this morning and suddenly found myself
pulling a few weeds.  I recently bought some cheap mulch which was a mistake and it seems that
there are weeds growing where ever I put the cheap mulch.  In moments I was covered in sweat because
July is hot in Missouri!

So today I did an indoor reel of my rose themed
table setting in the dining area.  I love Instagram
and have been learning to make reels.  I am not so
good at using my camera for video as I can't 
hold still yet!



I must confess that the roses are from the
market which had a buy one dozen, get
another dozen free.




The cozy is made from some older
Ralph Lauren fabric (a pillow sham cut up)

LEMON COCONUT CAKE ON THE BUFFET

I have been told by friends that they
don't bake in the hot summer.  I had a
sweet tooth yesterday and by evening
I was looking at recipes which led to
baking a Lemon Coconut Cake.



We had been to our son's for a family gathering
for our daughter in law's 50th birthday.  I wish
I had made it sooner to take for lunch.
I will be sharing some with them today.
