Now that summer is here and the heat is
definitely here, there are an abundance of
peaches available. We drove over to the Amish
country in Clark and bought a whole case
of peaches. Actually, the peaches originally
came from down in southeast Missouri.
I am so glad I saved my
home canning items and
quite a few jars.
I decided to make some peach jam and pies and
still have plenty left over to just eat.
I also made a pie for ourselves
and one for our son's family.
I did add 2 Tb fruit pectin
to the pie and 1 Tb cornstarch.
I also increased the
cinnamon to
2 Tb.
Oh peach pie! I have never made one, but it looks delicious. I have made plenty of pear pies because we have a pear tree. I HAD to make zucchini bread last week, hot or not, because...we have so many, and it's the best way to serve a zucchini! I just made sure to make it when several of the kids were coming over with grandkids, two loaves laden with chocolate chips, gone in a jiffy. I love browsing here, btw. :)
ReplyDeleteHow delicious. and I know what hot work it is to cook and can. It has be 15 years since we moved away from our acreage and I miss my pear and apple trees there. I used to can. Your pies look ready to eat right thru the computer screen.
ReplyDeleteThe peaches look delicious! We've been enjoying the Palisade Peaches here too. Last Friday was hot so I made a small skillet peach cobbler out on the grill...it was delicious. Good for you to put up peach jam and make pies. I recently helped a friend make apple pies to freeze. All the good fruit ripens in the heat of summer and needs canning... just a part of enjoying a good harvest.
