My favorite place in Colorado was featured in the second edition of the original Victoria magazine. I somehow missed the first edition but started my subscription with the winter 87/88 issue. It featured Georgetown, Colorado and the beautiful Victorian houses there.........

Today is Pink Saturday and oh my.....I forgot! What with Black Friday yesterday and my store a very busy and crazy place....whew! So here is my late Saturday post! This is actually a repost from my old blog...lovely Pink Things I love! I think Beverly will forgive me this one time!
Yes, I have a special love for dried flowers and especially roses!
Nothing tastes better than a wonderful lemon meringue pie.....Especially when it is made with fresh squeezed lemon juice!
Prepare a pie shell and bake it!
Ingredients for pie are as follows: 1 1/3 cups of sugar, 4 Tb cornstarch, 1 Tb flour, 1/2 cup cold water, 1 1/2 cups of separate water ready boil, 4 egg yolks slightly beaten, 2 Tb butter, 1 Tb grated lemon rind, 1/3 cup lemon juice
For the meringue you will need 4 egg whites, 1/4 tsp cream of tartar and 1/2 cup sugar
Combine the 1 1/3 cups of sugar, the cornstarch, the flour and cold water in a medium size saucepan and blend them together until smooth. Stir in the boiling water and cook stirring constantly
until the mixture begins to bubble and is thick. Simmer about 2 minutes and keeping stirring to keep from burning! Remove from heat....
Now blend about 1/2 of this hot mixutre into the egg yolks and return all to saucepan and cook about 2 minutes. Remove again and add butter, lemon rind and juice and stir through well. Set aside to cool slightly. Stir to let out steam and help cooling.
Meanwhile, beat the egg whites with the cream of tartar in a medium size bowl. Slowly add 1/2 cup sugar and continue beating still stiff. Pour the pie filling in the shell and spread egg white meringue on top. Put in the preheated oven of 400 degrees for about 8 minutes - watch for browning. Cool on a rack - when cool refrigerate for several hours.
I am very thankful and greatful to God for many simple things - a warm house - a warm bed to sleep in - food on my table - all the freedoms we enjoy and easily take for granted! I don't want to ever take them for granted! I AM THANKFUL!
Lately I have been collecting some interesting jams and preserves for my holiday baking....I love stocking the pantry with yummy things on hand......I know I am spoiled since I have been own line of food goodies but I look for others that are wonderful too!
This year people kept asking me for Lingonberries from Sweden and Christmas Preserves from England. Another favorite is the Stonewall Blueberries Jam which has little wild berries and is exceptional! I thought the Sugar Plum Jam looked like a winner too! Look around for some new and unsual ones you might use!

On August 24, 2009 I recommended a book to you on canning...."Well Preserved" by the late Joan Hassol is a delightful book to read! It is full of stories of how Joan canned her way through grief after her husband passed away.This summer I gave a box of canning jars with seals to Nancy Ament, who works next door at The Soap Box, a darling shop that smells heavenly!
Nancy's son had picked her some chokecherries and after borrowing my book she brought me back this delightful jar of Colorado Choke Cherry Jelly.

It is so easy to make a nice fresh spinach salad.....just wash your greens and drain well. Cut up an avocado, about 1/2 cup of craisins, 1/3 cup pine nuts, and about 6 pieces of bacon that has been fried and drained, and cut up into small pieces. Mix all through.....
At the last moment - pour on some Raspberry Vinaigrette dressing - enjoy!
