EASTER SALAD FROM PARADISE




Growing up I never had food like this. Our family was more meat and potatoes. I had this dish at my mother-law's house for the first time when I was dating my husband yet to be.

Children will love this salad as
 let's just say- it's more like dessert!

You will need: 1 15-20 oz size can of crushed pineapple, 1 10 1/4 oz bag of colored marshmellows, 1 8 oz cream cheese and 2 cups of whipped cream - 1 1/4 cups of heavy whipping cream will whip to 2 cups (original recipe called for cool whip if you prefer)

Drain the pineapple and mix with the marshmellows in a large bowl. Refrigerate several hours. Meanwhile allow cream cheese to soften at room temperature.

When soft, blend together cream cheese and whipping cream and mix with other items in bowl (on low with blender) Spoon all into pyrex dish and refrigerate until ready to eat.

This salad is fun for Easter decorated with some of those Peeps on top! Even though it is snowing today in Colorado- spring is coming!

  6. Mmm...that sounds soooo delicious! My mom always made a special salad similar to this, with marshmallows in it, for every special dinner. Sometimes I get a craving for it; I'll have to try your recipe!

  11. This is great! I love it! My grandchildren would eat this!! I got to make it. Can I copy a picture, when making your recipe, to go by, and if I post on it I will credit to you for this lovely recipe. I got to try your swans too. I hoping my grandcildren are going to daycare. I all worn out! lol You have such great ideas! You need to post this on Foodie Friday too. They will love you. You may be already on there. I have had no time to visit! Praying to have a little time before next surgery! If all tumors hold on, where they are I might get a few months of life to live. Before they kick me all the way back to.... I just love your blog. My dream has been before I die, I want to go to Colorado and while I am there, I want to go to a sheep farm. lol Everyone says why not Europe? No I been all over the USA, but not Colorado. My boss was going to fly me over there, but dedcided I might give up my fight to live. lol No, I might just find another state to go to. lol Love your town loved reading about it. I once flew some sheep in from Loveland,CO to Jackson, Mississippi, on Delta Airlines.
