LOVING THOSE IRISH CURRANT SCONES

With St. Patrick's Day just around the corner some Irish Currant Scones are in order.

Sharon O'Connor's fabulous Cookbook and CD Combination is loaded with authentic recipes and you will love these scones:

Recipe:  1 cup whole wheat flour, 2 cups unbleached all purpose flour, 1 tsp baking soda, 3 Tb sugar, 1/2 tsp salt, 1/3 cup cold butter cut into pieces, 1/3 cup dried currants, 1 cup buttermilk and 1 egg beaten.

Preheat the oven to 425 degrees.  In a large bowl, stir in flours, baking soda, sugar and salt until well blended.  Using a pastry cutter cut in the butter until the mixture resembles coarse crumbs.

Mix in the currants, then quickly stir in the buttermilk and egg to form a soft dough.  Turn the dough out onto a lightly floured surface and pat it to a 3/4" thickness.

Using a 2" scone cutter, cut the dough into rounds and place on a baking sheet.  Bake in the preheated oven for 15-20 minutes. I made 23 scones that were like sweet biscuits.

It's Tea Time in the Irish Isle.  And you don't have to be Irish to enjoy.  I am also sharing this favorite vintage apron with Shamrock's on it.  I wish I still had the lovely platter but somewhere in the kitchen journey - it got broken.  Right now my hubby has broken 2 butter dishes and I found a great one for $2.00 at the thrift store this week but also dropped it while walking around the store.  We are on a roll!

  4. SOOOOO cute! Love your St. Patrick's decorations and the scones sound lovely. I might have to try to make them. If I feel up to it. Blah....
We are having a huge St. Patrick's Day dinner for our friends and I should be better by then.
I haven't seen this book yet....I have so many Irish/Ireland books. If I buy one more I might bust the bookcases. HA!
    But this one looks "tempting."
Have a "Grand" weekend......be blessed, Joyce

  5. Looks yummy...I have a hard time finding currants, when that happens we generally settle for golden raisins...We are gearing up for a BIG St. Patty's weekend here at Miss Spenser's! Looking forward to this fun "green" holiday! Donna (IA)

  11. Hi Bernideen,
Your Irish scones do look delicious and I love the dear shamrock plate they are on. I'm sure that you have so much to do that blogging is hard to find time for. I do hope you are settled in your new home by spring and can enjoy decorating and bringing out all of your pretties to display. Such fun! Thank you for hosting BTTCG this week! Take care, Karen

  12. Bernideen, thank you for hosting. Those look delicious! Yum! This reminds me that I have lemon scones in the kitchen with whipped cream. I wanted to try the cream that comes in an unrefrigerated container from Trader Joe's, and it actually worked. xoxo Su

  13. Mmmmm the Irish scones look wonderful, dear Bernideen. I had the best scones when my late beloved and I visited Cabra Castle in Ireland. What memories! Your apron is so pretty and too bad about your platter, but there are always more dishes! You must be so busy with all that you have going on. Take care, my friend!

  15. Your plate of scones looks delicious - that is my favorite kind too. And the plate - wonderful. Did you know that the show "I Love Lucy" used those same ivy dishes as their everyday dishes? I sure would like to have a set of them.
