Today I am doing a very
quick "Tea In The Garden" posting
and sharing a cake I baked
this afternoon. The temperature
dropped to 90 degrees so I dashed
out in the backyard to get
some photos:
waiting on all the wonderful
hydrangeas. The spring flowers
have all faded away and now we
have some hot summer days.
I was searching the internet for a
Lemon Coconut Cake and had a
funny experience. I started to
read a recipe and the instructions
weren't at all like the photo and
I got rather suspicious. After
looking at other recipes I found
the real creator here at this site:
STL Cooks. The other person
must of copied their recipe and
even their photo. That was naughty.
I see that this site shared that they
adapted this recipe
from another site who took it from a 2006
Southern Living Recipe.......imagine
all that.
Needless to say - this cake is
delicious and like you do, I did
make a couple minor tweaks
myself using lemon extract in the lemon
filling and the main cake and using
coconut extract in the
cream cheese frosting.
Your photography is absolutely beautiful and your garden is sublime. I think I gained weight just looking at that cake, LOL Yum!

ReplyDeletefor 5 days with nights of 48 or so. Hot and humid 87 today. I see how tall your holly hocks are. They look as lovely as the tea and cake. Nice recipe as I love the flavor of coconut and lemon, both.

ReplyDeleteYour garden is always lovely, Bernideen, 90 plus degrees or not! I’m not a huge fan of the texture of coconut, so your use of coconut extract has me thinking I might like this cake. I adore lemon and the coconut cream cheese frosting is an interesting addition. It looks delicious!

ReplyDeleteOh how I love coconut. My Mother made fresh coconut cake for Christmas. She grated the coconut and it was yummy. Yours is beautiful and I know it was delicious.
