Here in the Rocky Mountains one particular type of peach is very popular. That would be Palisade Peaches which come from Palisade which is called the peach capital of Colorado. Tonight I baked a simple pie with these wonderful peaches:
I don't know what difference high altitude would make in a peach but these are really good!
Here is the recipe for Peach Pie:
Preheat oven to 425 degrees:
Here are the ingredients for the pie crust: 2 cups flour sifted, 1 tsp salt, 3/4 cup of crisco, 5 Tb iced water And the pie ingredients: 6 cups of sliced fresh ripe peaches, 1 tsp lemon juice, 3/4 cup light brown sugar,1/2 cup corn starch, 1/2 Tsp ground cinnamon - all very basic
After you make the crust bottom and put it in the pie plate, dump in the peach mixture, add the lattice and brush the tops of the dough with milk and sprinkle with sugar. Bake at 425 degrees for about 35 minutes (watch for too much browning) BAKE AWAY!

ReplyDeleteBeautiful, and it looks delicious, Bernideen! We love what we call "Colorado peaches." I don't know it they are Palisade peaches or not.
