PASS THE PEACH PIE PLEASE

Organic peaches were on sale at the market and calling out to me as I passed by!  We had company this week - so peach pie was on the menu!




You will need:  8 large ripe peaches peeled and chopped in a large bowl with 1 tsp lemon juice.  Add 3/4 cup brown sugar, 1 tsp ground cinnamon and 1/2 cup of  flour and 1/4 cup of cornstarch - mix through.  



Pour into a pie shell bottom and add the lattice top.  Brush with egg yolk and bake at 425 for 30 minutes   Enjoy!




Pie crust recipe:  2 cups sifted flour, cut in 3/4 cup crisco (or lard) using a flour kneader.  Add 5 - 8 Tb ice water to form a nice ball of dough.  Divide dough as 1/2 will be used for the lattice top.  Roll out on floured pastry cloth with a covered and floured rolling pin.  Press into pie shell.  After adding peach mix, cut the lattice strips and weave across the top.  You could use this recipe for other pies.

  1. Your pie looks GREAT, Bernideen! Yum, yum, yum!!! I use a pastry brush to "wet" my top crust (egg white or plain old water), and then sprinkle sugar on top. It looks pretty when baked. Have a blessed day, my friend.

  3. Just made one yesterday. The greengrocer said to hurry and make it while peaches are still in season. He was so right. Your pie looks lovely with the lattice top.

  6. Bernideen, your peach pie looks amazing. I love the look of a lattice top! You are such a good baker! Your hubby must love meal times. I haven't made a peach pie yet this summer.
